Vanilla Crème Brûlée

Silky custard with a shattering Apple Sugar crust.

Vanilla Crème Brûlée

Ingredients

  • 2 cups heavy cream
  • 5 egg yolks
  • ⅓ cup Apple Sugar, plus 4 tsp for topping
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

    Heat cream until steaming. Whisk yolks, ⅓ cup Apple Sugar, vanilla, and salt.

    Slowly whisk hot cream into yolks, then strain into four ramekins.

    Bake in a water bath at 325°F until just set, about 35 minutes. Chill 3 hours.

    Sprinkle 1 tsp Apple Sugar on each, torch until caramelized, and serve.
